Ingredients (4 servings):
- 400 g Gino tortellini
- 100 g fresh basil
- 50 g pine nuts
- 2 cloves of garlic
- 100 g grated Parmigiano Reggiano
- 100 g of grated Pecorino
- 150 ml extra virgin olive oil
- Salt to taste
- Pepper to taste
Instructions
Wash the basil and dry it well. In a mortar or blender, mash together the basil, pine nuts and garlic until you obtain a homogeneous paste. Gradually add the Parmigiano, Pecorino and a pinch of salt, continuing to mash or blend.
Slowly pour the olive oil in a stream, mixing continuously until you obtain a creamy and well-blended sauce.
Cook the tortellini in plenty of salted water following the times indicated on the package. Drain the tortellini and season them immediately with the prepared pesto, mixing gently.
Serve hot with a pinch of Parmigiano and pepper to taste.
