Ingredients (4 servings):

  • 400 g Gino tortellini
  • 2 liters of meat broth
  • 1 medium carrot
  • 1 medium onion
  • 2 bay leaves
  • 3-4 sprigs of parsley
  • Salt and pepper
  • Grated parmesan

Instructions

Start by preparing the meat or vegetable broth. If you are using a ready-made broth, heat the broth in a large pot and continue with the next step. If you prefer to prepare the broth at home, you can do it in advance, following a basic meat-based recipe. Remember to remove the foam that forms on the surface so that the broth is clear.

Once the broth is hot, add the carrot, celery and onion slices to the pot. Also add the bay leaves and parsley. Let the broth cook over medium-low heat for about 15-20 minutes, or until the vegetables are tender and the broth has developed a rich flavor.

Meanwhile, bring a separate pot of lightly salted water to a boil and cook the Pastificio Bolognese tortellini. Drain the tortellini from the cooking water.

To serve, fill the plate with the cooked tortellini and pour the hot broth with the vegetables on top.

Sprinkle some grated Parmesan over the top of each bowl.
